For the Cake
  • 1 ½ cups all-purpose flour sifted
  • 1 cup unsweetened apple sauce room temperature
  • 1 cup granulated sugar can substitute with brown sugar for a richer flavor
  • ½ cup vegetable oil or melted coconut oil
  • 2 large eggs room temperature
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda ensure it's fresh for proper rising
  • 1 teaspoon ground cinnamon for warmth and flavor
  • ½ teaspoon ground nutmeg optional, for added spice
  • ½ teaspoon salt to balance sweetness
For the Glaze
  • 1 cup powdered sugar sifted
  • 2 tablespoons milk or cream for a richer glaze
  • ½ teaspoon vanilla extract

Method
 

Prepare the Cake
  1. Preheat your oven to 350°F (175°C). This ensures that the cake bakes evenly.
  2. Grease and flour a 9-inch round cake pan to prevent sticking.
  3. In a large mixing bowl, combine the sifted flour, baking soda, cinnamon, nutmeg, and salt. Whisk together to evenly distribute the dry ingredients.
  4. In another bowl, whisk together the sugar, vegetable oil, eggs, apple sauce, and vanilla extract until well combined. This mixture will provide moisture and sweetness to the cake.
  5. Gradually add the dry ingredients to the wet ingredients, folding gently with a rubber spatula until just combined. Be careful not to overmix, as this can make the cake dense.
  6. Pour the batter into the prepared cake pan and smooth the top with the spatula.
  7. Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean. This indicates that the cake is fully baked.
  8. Once baked, remove the cake from the oven and let it cool in the pan for 10 minutes before transferring it to a cooling rack to cool completely.
Prepare the Glaze
  1. In a small bowl, mix the sifted powdered sugar, milk, and vanilla extract until smooth. Adjust the consistency by adding more milk if too thick or more sugar if too thin.
  2. Once the cake is completely cool, drizzle the glaze over the top, allowing it to drip down the sides for a beautiful finish.
