How to Make Authentic Jamaican Curry Chicken
  1. Season the chicken with 2 tablespoons of Jamaican curry powder, salt, black pepper, garlic, ginger, and 1 tablespoon of vegetable oil. Let it marinate for at least 30 minutes.
  2. Heat 2 tablespoons of vegetable oil in a large pot over medium heat. Add 1 teaspoon of Jamaican curry powder and toast until fragrant.
  3. Brown the chicken by adding it to the pot. Ensure it gets a nice golden crust on all sides.
  4. Remove the chicken from the pot and sauté the chopped onion, minced garlic, fresh thyme, and Scotch bonnet pepper until fragrant.
  5. Return the browned chicken to the pot, then add the diced potatoes and optional carrot along with enough water to cover the contents halfway.
  6. Bring it to a gentle boil, then reduce heat to simmer. Cover and cook for 30–40 minutes until chicken is tender and sauce thickens.
  7. Taste and adjust the seasoning to your palate before serving, pairing with warm rice or roti.
