How to Make Authentic Jamaican Curry Chicken
- Season the chicken with 2 tablespoons of Jamaican curry powder, salt, black pepper, garlic, ginger, and 1 tablespoon of vegetable oil. Let it marinate for at least 30 minutes.
- Heat 2 tablespoons of vegetable oil in a large pot over medium heat. Add 1 teaspoon of Jamaican curry powder and toast until fragrant.
- Brown the chicken by adding it to the pot. Ensure it gets a nice golden crust on all sides.
- Remove the chicken from the pot and sauté the chopped onion, minced garlic, fresh thyme, and Scotch bonnet pepper until fragrant.
- Return the browned chicken to the pot, then add the diced potatoes and optional carrot along with enough water to cover the contents halfway.
- Bring it to a gentle boil, then reduce heat to simmer. Cover and cook for 30–40 minutes until chicken is tender and sauce thickens.
- Taste and adjust the seasoning to your palate before serving, pairing with warm rice or roti.
