Ingredients

For the Chicken Marinade
  • 8 pieces chicken drumsticks skin-on, bone-in for best flavor
  • 2 tablespoons olive oil extra virgin for enhanced flavor
  • 1 teaspoon garlic powder for a savory depth
  • 1 teaspoon onion powder adds sweetness
  • 1 teaspoon paprika for color and smokiness
  • 1 teaspoon salt to enhance flavor
  • ½ teaspoon black pepper freshly ground for best taste
  • ½ teaspoon dried thyme adds herbal notes
  • ½ teaspoon cayenne pepper optional, for heat

Method

Prepare the Chicken
  1. Preheat your oven to 425°F (220°C). This high temperature will help to crisp the skin of the drumsticks.
  2. In a large mixing bowl, combine the olive oil, garlic powder, onion powder, paprika, salt, black pepper, dried thyme, and cayenne pepper (if using). Mix well to create a marinade.
  3. Add the chicken drumsticks to the bowl and toss them in the marinade until they are evenly coated. Let them marinate for at least 15 minutes at room temperature, or up to 2 hours in the refrigerator for deeper flavor.
Bake the Drumsticks
  1. Line a baking sheet with parchment paper to prevent sticking and for easy cleanup.
  2. Arrange the marinated drumsticks on the baking sheet in a single layer, ensuring they are not touching each other. This allows for even cooking and crisping.
  3. Place the baking sheet in the preheated oven and bake for 35-45 minutes, or until the internal temperature reaches 165°F (74°C) when measured with a meat thermometer. This ensures the chicken is fully cooked and safe to eat.
  4. For extra crispiness, you can broil the drumsticks for an additional 2-3 minutes at the end of the cooking time. Keep a close eye on them to prevent burning.
Serve
  1. Remove the drumsticks from the oven and let them rest for 5 minutes before serving. This allows the juices to redistribute, making the chicken more tender.
  2. Serve hot with your favorite sides, such as roasted vegetables, mashed potatoes, or a fresh salad.
