Prepare the Chicken
- In a slow cooker, add the chicken breasts, olive oil, garlic powder, onion powder, smoked paprika, salt, and black pepper. This combination of spices will enhance the flavor of the chicken as it cooks.
- Pour the barbecue sauce over the chicken, ensuring it is well coated. The sauce will keep the chicken moist and infuse it with flavor.
- Cover and cook on low for 4-5 hours or high for 2-3 hours, until the chicken is tender and easily shreds with a fork.
- Once cooked, remove the chicken from the slow cooker and shred it using two forks. Return the shredded chicken to the slow cooker and mix it with the remaining sauce for added flavor.
Assemble the Sliders
- Preheat a grill or grill pan over medium heat. If desired, lightly toast the slider buns on the grill for a minute or two until golden brown.
- On the bottom half of each slider bun, place a generous portion of the BBQ chicken.
- Top the chicken with a spoonful of coleslaw for crunch and freshness. The coleslaw adds a creamy texture that complements the BBQ chicken.
- If using, add a few slices of pickles on top for an extra tangy flavor.
- Place the top half of the bun on each slider and serve immediately on a platter.
