Ingredients
  

For the Chicken
  • 1 lb boneless, skinless chicken breasts trimmed of excess fat
  • 1 cup barbecue sauce your favorite brand
  • 1 tablespoon olive oil for sautéing
  • 1 teaspoon garlic powder for flavor
  • 1 teaspoon onion powder for flavor
  • 1 teaspoon smoked paprika for a smoky flavor
  • 1 teaspoon salt to taste
  • ½ teaspoon black pepper to taste
For the Sliders
  • 8 count slider buns soft, preferably whole wheat
  • 1 cup coleslaw for topping
  • ¼ cup pickles sliced, for garnish

Method
 

Prepare the Chicken
  1. In a slow cooker, add the trimmed chicken breasts.
  2. In a small bowl, mix together the barbecue sauce, olive oil, garlic powder, onion powder, smoked paprika, salt, and black pepper.
  3. Pour the sauce mixture over the chicken, ensuring it is well coated.
  4. Cover and cook on low for 4-6 hours or on high for 2-3 hours until the chicken is tender and easily shredded.
Shred the Chicken
  1. Once cooked, remove the chicken from the slow cooker and place it on a cutting board.
  2. Using two forks, shred the chicken into bite-sized pieces.
  3. Return the shredded chicken to the slow cooker and stir to combine with the remaining sauce.
Assemble the Sliders
  1. Preheat a grill or grill pan over medium heat.
  2. Slice the slider buns in half and lightly toast them on the grill for 1-2 minutes until golden.
  3. On the bottom half of each bun, add a generous scoop of the BBQ chicken mixture.
  4. Top with a spoonful of coleslaw and a few pickle slices.
  5. Place the top half of the bun on each slider and serve immediately.
