Prepare the Chicken
- In a slow cooker, add the trimmed chicken breasts.
- In a small bowl, mix together the barbecue sauce, olive oil, garlic powder, onion powder, smoked paprika, salt, and black pepper.
- Pour the sauce mixture over the chicken, ensuring it is well coated.
- Cover and cook on low for 4-6 hours or on high for 2-3 hours until the chicken is tender and easily shredded.
Shred the Chicken
- Once cooked, remove the chicken from the slow cooker and place it on a cutting board.
- Using two forks, shred the chicken into bite-sized pieces.
- Return the shredded chicken to the slow cooker and stir to combine with the remaining sauce.
Assemble the Sliders
- Preheat a grill or grill pan over medium heat.
- Slice the slider buns in half and lightly toast them on the grill for 1-2 minutes until golden.
- On the bottom half of each bun, add a generous scoop of the BBQ chicken mixture.
- Top with a spoonful of coleslaw and a few pickle slices.
- Place the top half of the bun on each slider and serve immediately.
