How to Make Beef Stroganoff
- Prepare the Beef: Start by slicing the beef sirloin or tenderloin into thin strips, cutting against the grain for the best tenderness.
- Sear the Beef: Heat olive oil and unsalted butter in a skillet. Sear the beef in batches for 1-2 minutes on each side until browned. Set aside.
- Sauté the Vegetables: Add remaining butter to the skillet, sauté onion for 3-4 minutes, then add mushrooms and cook until browned. Stir in minced garlic.
- Create the Sauce: Sprinkle flour over vegetables, stir, then add beef broth gradually, stirring well. Add Dijon mustard and simmer until thickened.
- Finish the Dish: Stir in sour cream until smooth, return beef to skillet, mix well and heat through for 2-3 minutes without boiling.
