How to Make Blue Christmas Truffles
- Beat softened cream cheese until it’s nice and smooth, about 1-2 minutes.
- Add the powdered sugar gradually, mixing thoroughly until well combined and fluffy.
- Stir in the vanilla extract, almond extract, and blue food coloring, mixing until color is evenly distributed.
- Scoop tablespoon-sized amounts and roll them into balls, using water on hands to prevent sticking.
- Place rolled truffles on a parchment-lined tray and freeze for 30 minutes.
- Melt white chocolate in the microwave using 20-second bursts, stirring until smooth.
- Dip each frozen truffle into melted chocolate, letting excess drip off.
- Sprinkle coated truffles with blue sparkling sugar immediately.
- Let truffles set at room temperature or chill in the fridge for 15 minutes before serving.
