Ingredients

For the Sandwiches
  • 4 large eggs room temperature for better mixing
  • ¼ cup milk whole milk or your choice of milk
  • ½ teaspoon salt to taste
  • ¼ teaspoon black pepper freshly ground
  • 8 slices turkey bacon or your preferred bacon
  • 4 slices cheddar cheese or cheese of your choice
  • 4 whole grain English muffins split and toasted
  • 1 tablespoon olive oil for cooking bacon

Method

Prepare the Ingredients
  1. Gather all ingredients and equipment needed for the recipe. This ensures a smooth cooking process without interruptions.
Cook the Turkey Bacon
  1. In a skillet, heat 1 tablespoon of olive oil over medium heat. Once hot, add the turkey bacon slices. Cook for about 4-5 minutes on each side, or until crispy. Remove from the skillet and place on a paper towel to absorb excess grease.
Scramble the Eggs
  1. In a mixing bowl, whisk together the eggs, milk, salt, and black pepper until fully combined. This mixture will create fluffy scrambled eggs.
  2. In the same skillet used for the bacon, reduce the heat to low. Pour in the egg mixture and gently stir with a spatula. Cook for about 5-7 minutes, stirring occasionally, until the eggs are fully cooked but still soft and creamy.
Assemble the Sandwiches
  1. Take the toasted English muffins and place a slice of cheese on the bottom half of each muffin.
  2. Add a portion of the scrambled eggs on top of the cheese, followed by two slices of turkey bacon. Top with the other half of the English muffin.
Meal Prep and Storage
  1. Place each assembled sandwich in a meal prep container. Allow them to cool completely before sealing the containers to prevent condensation.
  2. Store the sandwiches in the refrigerator for up to 4 days. To reheat, microwave for 1-2 minutes or until heated through.
