Method

How to Make Butter Mints
  1. Beat softened butter in a stand mixer on medium speed until creamy, about 2-3 minutes.
  2. Add 2 cups of powdered sugar slowly on low speed to prevent a sugary cloud.
  3. Incorporate peppermint extract, vanilla extract, and salt, mixing until blended.
  4. Pour in the heavy cream and gradually increase the speed to medium.
  5. Blend in the remaining 2 cups of powdered sugar until the dough is smooth and thick.
  6. Adjust the texture by adding extra powdered sugar if the dough feels too sticky.
  7. Color the dough by adding optional food coloring if desired.
  8. Roll small portions of dough into logs about ½-inch thick.
  9. Slice the logs into ¼–½ inch pieces.
  10. Place the pieces on wax paper and let them dry uncovered at room temperature for several hours.
  11. Store the dried mints in an airtight container with wax paper between layers.
