How to Make Cheesy Baked Stuffed Tomatoes
  1. Prepare the Tomatoes: Slice off the tops and scoop out the pulp and seeds. Lightly salt the insides and set upside down on paper towels.
  2. Mix the Filling: In a bowl, combine breadcrumbs, minced garlic, herbs, half of the mozzarella, and half of the Parmesan with olive oil. Mix until well combined.
  3. Stuff the Tomatoes: Pat the tomatoes dry and fill each with the mixture, topping with remaining cheeses.
  4. Bake to Perfection: Place in a greased baking dish and bake at 375°F (190°C) for 20-25 minutes until golden.
  5. Garnish and Serve: Let cool, then garnish with herbs and a drizzle of olive oil before serving.
