- Drizzle & Rub: Drizzle the olive oil over the chicken, rubbing it in well, ensuring to get some under the skin.
- Mix Spices: In a bowl, combine all the spices: garlic powder, onion powder, paprika, thyme, rosemary, salt, black pepper, and smoked paprika (if using).
- Season: Sprinkle the spice mixture evenly over both sides of the chicken, pressing gently to help the seasoning adhere.
- Arrange: Place the seasoned thighs skin-side up on a parchment-lined, rimmed baking sheet.
