How to Make Chocolate Covered Strawberry Cookies
- Preheat your oven to 350°F (or 325°F for dark pans).
- Combine the strawberry cake mix, vegetable oil, vanilla extract, and eggs in a large mixing bowl.
- Chill the dough for 15–30 minutes in the refrigerator.
- Shape the chilled dough into 1-inch balls, placing them 2 inches apart on an ungreased cookie sheet.
- Bake the cookies for 9–12 minutes until the tops appear dry and the edges turn lightly golden.
- Cool the cookies for 1 minute on the sheet, then transfer them to wire racks to cool completely for about 30 minutes.
- Melt your chocolate chips or candy melts until smooth. Dip or drizzle over each cooled cookie.
- Sprinkle your optional sprinkles on top before the chocolate sets.
