Making the Brownies
- Preheat your oven to 350°F (175°C) and prepare an 8x8-inch baking pan by lining it with parchment paper.
- Whisk together melted butter, granulated sugar, eggs, and vanilla extract until smooth.
- Sift in cocoa powder, flour, salt, and baking powder. Fold gently.
- Pour brownie batter into the pan and bake for 20–25 minutes. Cool completely.
Making the Mousse and Ganache
- Heat milk and pour it over chopped chocolate. Stir until smooth and let cool.
- Whip heavy cream and powdered sugar until soft peaks form.
- Fold a spoonful of whipped cream into the chocolate, then fold in the remaining cream.
- Spread mousse over cooled brownies and refrigerate for 2 hours.
- Heat heavy cream and pour over chopped chocolate for ganache. Stir until smooth.
- Pour ganache over mousse layer and refrigerate for an additional hour.
- Lift brownies from the pan using parchment overhang and slice into squares.
