- In a large bowl, mix together chopped strawberries, Greek yogurt, honey, and vanilla extract until they're well combined.
- Using a spoon, scoop about 2 tablespoons of the yogurt mixture onto a parchment-lined baking sheet, aiming for about 10 clusters.
- Place the baking sheet in the freezer and let the clusters freeze until completely solid, about 1 to 2 hours.
- In a microwave-safe bowl, melt the semi-sweet chocolate chips with refined coconut oil in 15 to 30-second intervals.
- Dip each frozen yogurt cluster into the melted chocolate, using a spoon to coat it thoroughly.
- Place the dipped clusters back onto the parchment-lined baking sheet, and optionally sprinkle with sea salt.
- Return the baking sheet to the freezer for a brief time to let the chocolate harden completely before serving.
