  • 1 medium cucumber peeled and diced
  • 1 small red onion finely sliced
  • ¼ cup fresh basil leaves torn into pieces
  • ¼ cup fresh parsley chopped
For the Vinaigrette
  • 3 tablespoons extra virgin olive oil high quality for best flavor
  • 1 tablespoon red wine vinegar or balsamic vinegar
  • 1 teaspoon honey to balance acidity
  • ½ teaspoon salt to taste
  • ¼ teaspoon black pepper freshly ground

Method
 

Prepare the Salad
  1. Start by washing the tomatoes, cucumber, and herbs thoroughly under cold water to remove any dirt or pesticides.
  2. Dice the tomatoes into bite-sized pieces and place them in a large mixing bowl.
  3. Peel the cucumber, slice it in half lengthwise, and remove the seeds with a spoon. Dice the cucumber and add it to the bowl with the tomatoes.
  4. Finely slice the red onion and add it to the bowl. The onion adds a sharp flavor that complements the sweetness of the tomatoes.
  5. Tear the basil leaves into smaller pieces and chop the parsley. Add both herbs to the salad mixture for freshness.
Make the Vinaigrette
  1. In a small bowl, combine the extra virgin olive oil, red wine vinegar, honey, salt, and black pepper.
  2. Whisk the ingredients together until emulsified. This means the oil and vinegar will blend together, creating a smooth dressing.
Combine and Serve
  1. Pour the vinaigrette over the salad mixture and gently toss everything together until evenly coated. Be careful not to mash the tomatoes.
  2. Taste the salad and adjust seasoning if necessary, adding more salt or pepper to your preference.
