Preparation
- Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.
- Whisk together the melted butter and brown sugar in a large bowl until smooth. Add in the eggs and vanilla extract, and mix until fully blended.
- In a separate bowl, whisk together flour, baking powder, salt, and ground ginger. Gradually fold this dry mixture into the wet ingredients until just incorporated.
- Gently fold in the white chocolate chips and dried cranberries. Spread the batter evenly in the prepared baking pan.
- Bake for 20–24 minutes or until golden brown. Allow the bars to cool completely in the pan on a wire rack.
- In a mixing bowl, beat the softened cream cheese until smooth. Gradually add the powdered sugar and orange zest, beating until fluffy.
- Spread the frosting evenly over the cooled bars.
- Top with chopped dried cranberries and drizzle melted white chocolate over the bars.
- Chill for at least 30 minutes before slicing into squares or triangles.
