  • 1.5 teaspoons baking powder
  • 1 teaspoon salt
  • 0.5 teaspoon baking soda
  • 0.75 cups orange juice
  • 2 tablespoons butter or shortening Use butter for richer flavor
  • 1 tablespoon orange zest
  • 1 large egg, beaten
  • 1.5 cups coarsely chopped cranberries fresh or dried
  • 0.5 cup chopped nuts pecans or walnuts

Method
 

Making the Bread
  1. Preheat your oven to 350°F.
  2. Prepare your loaf pan by greasing or lining it with parchment paper.
  3. Cream the softened butter or shortening with the sugar until light and fluffy.
  4. Combine the dry ingredients: flour, baking powder, salt, and baking soda.
  5. Incorporate the wet ingredients: orange zest, orange juice, and beaten egg.
  6. Fold in the cranberries and nuts gently.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for about 55 minutes, or until a toothpick inserted comes out clean.
  9. Cool in the pan for 15 minutes, then let it cool completely on a wire rack.
