  4. Shred Chicken: Once cooked, take two forks and shred the chicken directly in the pot.
  5. Create the Creamy Mixture: In a small bowl, whisk together the cream or half and half with 1 tablespoon of cornstarch. Stir into the soup.
  6. Add Gnocchi and Spinach: Toss in the gnocchi and spinach. Cover and cook on high for an additional 30–45 minutes.
  7. Season to Taste: Adjust seasoning with salt, pepper, or lemon juice if desired.
