How to Make Crock Pot Cajun Chicken Pasta
  1. Begin by cubing the chicken breasts into bite-sized pieces. Toss them in Cajun seasoning until thoroughly coated.
  2. Place the seasoned chicken, minced garlic, chopped onion, and sun-dried tomatoes into the slow cooker. Pour in the chicken broth.
  3. Set your slow cooker to low and let it work its magic for 4–5 hours, or set it to high for 2–3 hours.
  4. Once cooked, gently stir in the cream cheese and heavy cream. Cover and continue cooking for an additional 20–30 minutes.
  5. While the sauce is thickening, cook the penne pasta according to the package instructions until al dente. Drain and set aside.
  6. Add the cooked pasta and grated Parmesan cheese into the slow cooker. Stir until fully coated with sauce.
  7. Dish out the pasta while it's hot, and garnish with fresh parsley if desired.
