Ingredients

  • 1 lb boneless, skinless chicken breasts trimmed of excess fat
  • 1 cup salsa your choice of mild, medium, or hot
  • 1 can black beans drained and rinsed
  • 1 cup corn frozen or canned, drained
  • 1 packet taco seasoning store-bought or homemade
  • 8 oz cream cheese softened to room temperature
  • 1 cup shredded cheddar cheese for topping
  • 1 tablespoon olive oil for sautéing
  • 1 cup chicken broth low sodium recommended

Method
 

Prepare the Chicken
  1. Place the trimmed chicken breasts at the bottom of the crock pot. This allows the chicken to cook evenly and absorb the flavors from the other ingredients.
Add the Vegetables and Seasoning
  1. In a mixing bowl, combine the salsa, black beans, corn, and taco seasoning. Stir well to ensure the seasoning is evenly distributed.
  2. Pour this mixture over the chicken in the crock pot, ensuring the chicken is well coated.
Add Cream Cheese and Broth
  1. Cut the softened cream cheese into cubes and place them on top of the chicken and vegetable mixture. This will melt down and create a creamy sauce.
  2. Pour the chicken broth over everything in the crock pot. This will help keep the chicken moist and create a delicious sauce.
Cook the Chicken
  1. Cover the crock pot with the lid and set it to cook on low for 6 hours or high for 3 hours. Cooking on low allows the flavors to meld beautifully.
  2. After the cooking time is complete, check that the chicken is cooked through (internal temperature should reach 165°F). Use two forks to shred the chicken directly in the pot.
Finish and Serve
  1. Stir the shredded chicken into the creamy sauce until well combined.
  2. Serve hot, topped with shredded cheddar cheese. This dish is great in tacos, burritos, or over rice.
