How to Make Fluffy Pancakes
- In a large bowl, mix together the all-purpose flour, baking powder, salt, and sugar. Create a well in the center for the wet ingredients.
- Add in the milk, egg, melted butter, and vanilla extract. Mix everything together aiming for a lump-free but slightly thick batter.
- Preheat a non-stick pan or griddle over medium heat, greasing lightly. Pour ¼ cup of batter for each pancake onto the hot surface.
- Cook for about 2 minutes or until bubbles pop on the surface. Flip and cook the other side for just a bit less.
- Serve warm or keep warm in a 200°F oven until ready to enjoy.
