Ingredients
  

Main Ingredients
  • 2 lbs fresh ripe tomatoes preferably Roma or San Marzano, chopped
  • 1 medium onion finely chopped
  • 4 cloves garlic minced
  • 1 tablespoon olive oil extra virgin
  • 1 teaspoon dried oregano or 1 tablespoon fresh oregano, chopped
  • 1 teaspoon dried basil or 1 tablespoon fresh basil, chopped
  • 1 teaspoon sugar to balance acidity
  • ½ teaspoon salt to taste
  • ¼ teaspoon black pepper freshly ground, to taste
  • ¼ cup fresh basil for garnish, chopped

Method
 

Prepare the Ingredients
  1. Wash the tomatoes thoroughly under cold water. Remove the stems and chop them into quarters. This will help release their juices during cooking.
  2. Finely chop the onion and mince the garlic. This will ensure they cook evenly and infuse the sauce with flavor.
Cook the Base
  1. In a large saucepan, heat the olive oil over medium heat. This helps to release the flavors from the garlic and onion.
  2. Add the chopped onion and sauté for about 5 minutes, or until translucent. Stir occasionally to prevent burning.
  3. Add the minced garlic and cook for an additional 1-2 minutes, until fragrant. Be careful not to let it brown, as burnt garlic can taste bitter.
Add Tomatoes and Seasoning
  1. Add the chopped tomatoes to the saucepan. Stir well to combine with the onion and garlic.
  2. Sprinkle in the dried oregano, dried basil, sugar, salt, and black pepper. Stir to incorporate all the ingredients.
Simmer the Sauce
  1. Bring the mixture to a simmer. Reduce the heat to low and let it cook uncovered for about 20-25 minutes, stirring occasionally. This allows the flavors to meld and the sauce to thicken.
  2. If you prefer a smoother sauce, you can use a blender or immersion blender to puree it to your desired consistency.
Finish and Serve
  1. Taste the sauce and adjust seasoning if necessary, adding more salt or pepper to taste.
  2. Remove from heat and stir in the fresh basil just before serving for a burst of freshness.
  3. Serve over your favorite pasta, use as a pizza sauce, or enjoy as a dipping sauce with bread.

Notes

For the best flavor, use ripe, in-season tomatoes. If fresh tomatoes are not available, you can substitute with high-quality canned tomatoes.
