Preparation
- Preheat your oven to 350°F.
- Sauté the chopped kale in 3 tablespoons of olive oil over medium-high heat for about 5–7 minutes until it's wilted.
- Cool the sautéed kale slightly.
- Pulse the cooled kale and minced garlic in a food processor until finely chopped.
- Combine in a large bowl—mix the ground turkey, kale mixture, eggs, oregano, rosemary, parsley, salt, and black pepper.
- Form the mixture into 2-inch meatballs with your hands.
- Line two baking sheets with parchment paper and arrange your meatballs evenly.
- Bake them in the oven for about 40 minutes, or until the internal temperature reaches 165°F.
- Rest the meatballs for 5 minutes before serving.
