  • 1 lb Ground Turkey (93% lean) a leaner protein option
  • 2 cups Chopped Kale rich in vitamins
  • 3 cloves Garlic minced or grated
  • 2 tablespoon Olive Oil for sautéing the kale
  • 1 teaspoon Dried Oregano adds Mediterranean flair
  • 1 teaspoon Dried Rosemary fragrant, woodsy note
  • 1 teaspoon Dried Parsley mild herbal freshness
  • 1 teaspoon Salt enhances flavor
  • ½ teaspoon Black Pepper adds hint of spice
  • 1 large Egg acts as binder
Sautéing
  • 1 tablespoon Extra Olive Oil for sautéing if needed

Method
 

Preparation
  1. Preheat your oven to 350°F.
  2. Sauté the chopped kale in 3 tablespoons of olive oil over medium-high heat for about 5–7 minutes until it's wilted.
  3. Cool the sautéed kale slightly.
  4. Pulse the cooled kale and minced garlic in a food processor until finely chopped.
  5. Combine in a large bowl—mix the ground turkey, kale mixture, eggs, oregano, rosemary, parsley, salt, and black pepper.
  6. Form the mixture into 2-inch meatballs with your hands.
  7. Line two baking sheets with parchment paper and arrange your meatballs evenly.
  8. Bake them in the oven for about 40 minutes, or until the internal temperature reaches 165°F.
  9. Rest the meatballs for 5 minutes before serving.
