- Brown ground turkey with chopped onion in a large pot over medium-high heat for about 5-7 minutes until turkey starts to brown; drain fat and return pot to heat.
- Stir in minced garlic and all the spices; cook for about 1-2 minutes until fragrant.
- Add broth and bring to a boil; toss in carrots, celery, sweet potato, and cabbage. Cook until slightly tender, about 10 minutes.
- Stir in diced tomatoes with juice and drained white beans; simmer for 20 minutes or until the carrots and potatoes are nearly tender.
- Add zucchini and squash; simmer for 5-10 more minutes until everything is tender.
- Remove thyme stems if used fresh; skim foam off surface for a clearer broth.
- Serve hot and garnish with fresh parsley, pesto, or grated parmesan.
