Ingredients
  

For the Soup Base
  • 1 lb Ground turkey
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon kosher salt adjust to taste
  • 1 teaspoon black pepper
  • 1 tablespoon oregano fresh is great too
  • 1 teaspoon garlic powder
  • 1 tablespoon smoked paprika
  • 1 teaspoon celery seed use less if preferred
  • 1 tablespoon basil fresh or dried
  • ½ teaspoon crushed red pepper optional for heat
  • 1 tablespoon dried thyme or fresh thyme sprigs
  • 6 cups chicken or turkey broth low-sodium preferred
For the Vegetables
  • 2 cups carrots, chopped
  • 2 cups celery, chopped
  • 1 medium sweet potato, peeled and chopped
  • 2 cups coleslaw mix or chopped cabbage
  • 1 can diced tomatoes fire roasted preferred
  • 1 can white beans, drained
  • 1 medium zucchini, chopped
  • 1 medium yellow squash, chopped
Optional Garnishes
  • ¼ cup chopped parsley
  • 2 tablespoon pesto
  • ¼ cup parmesan cheese grated

Method
 

Cooking Instructions
  1. Brown ground turkey with chopped onion in a large pot over medium-high heat for about 5-7 minutes until turkey starts to brown; drain fat and return pot to heat.
  2. Stir in minced garlic and all the spices; cook for about 1-2 minutes until fragrant.
  3. Add broth and bring to a boil; toss in carrots, celery, sweet potato, and cabbage. Cook until slightly tender, about 10 minutes.
  4. Stir in diced tomatoes with juice and drained white beans; simmer for 20 minutes or until the carrots and potatoes are nearly tender.
  5. Add zucchini and squash; simmer for 5-10 more minutes until everything is tender.
  6. Remove thyme stems if used fresh; skim foam off surface for a clearer broth.
  7. Serve hot and garnish with fresh parsley, pesto, or grated parmesan.

Notes

For best flavor, brown turkey evenly and do not burn the garlic. Simmer gently after adding broth to avoid mushy vegetables.
