  • 2 cups orzo pasta providing a hearty base

  • 10 oz cherry tomatoes halved, adds sweetness
  • 7 oz asparagus cut into 1-inch pieces
For the Creamy Finish
  • 2 tablespoon mascarpone cheese adds creaminess
  • 0.5 oz fresh basil finely chopped for freshness
  • 2 tablespoon fresh chives adds a mild onion flavor
For DIY Seasoning
  • 3 tablespoon olive oil for drizzling and roasting
  • Salt to taste
  • Black pepper freshly cracked to taste
For the Greens
  • 3.5 oz baby spinach roughly chopped

Method
 

How to Make Healthy Baked Feta Orzo
  1. Preheat oven to 200°C (390°F). Place feta cheese in oven-safe pan, drizzle with 1 tablespoon olive oil, and roast for 8 minutes.
  2. Add vegetables: remove from oven, scatter cherry tomatoes and asparagus around feta, drizzle with remaining olive oil, season with black pepper, return to oven for 12-15 minutes.
  3. Cook orzo: bring pot of salted water to boil, add orzo and cook for 8-10 minutes, reserving ½ cup of pasta water before draining.
  4. Combine feta and orzo: mash feta in pan, mix in cooked orzo and reserved pasta water, stir in baby spinach until wilted.
  5. Finish with creaminess: add mascarpone, basil, and chives, season with salt and pepper to taste. Serve hot.
