  • 1 bottle red liquid food dye

  • 8 oz cream cheese softened
  • ¼ cup unsalted butter softened
  • 2 cups confectioners’ sugar sifted
  • 1 teaspoon vanilla extract

How to Make Homemade Red Velvet Whoopie Pies
  1. Preheat oven to 375°F (190°C) and line baking sheets with parchment paper.
  2. Sift together flour, cocoa powder, baking soda, baking powder, and salt.
  3. Combine buttermilk and red food dye in a separate bowl, stirring until evenly mixed.
  4. Cream softened butter until smooth, then gradually add granulated sugar and beat until fluffy.
  5. Add egg and vanilla extract, mixing until fully combined.
  6. Alternately add the dry mixture and dyed buttermilk to the butter-sugar mixture.
  7. Mix the batter gently until just combined to avoid toughness.
  8. Drop tablespoon-sized portions of batter onto lined baking sheets, smoothing tops with wet fingers.
  9. Bake for 9-11 minutes until puffed and springy; cool on a wire rack.
  10. Beat softened butter until creamy, then blend in cream cheese until smooth for the filling.
  11. Add sifted confectioners’ sugar and vanilla extract, continuing to mix until creamy.
  12. Spread or pipe filling onto flat side of a cookie, then top with another cookie to assemble.
