Ingredients
  

Batter
  • ½ cup unsalted butter softened
  • 1 cup granulated sugar
  • ½ cup brown sugar
  • 2 large eggs room temperature
  • 1 teaspoon vanilla extract pure
  • cup Dutch-processed cocoa powder
  • ½ cup all-purpose flour
  • ¼ teaspoon salt
Topping
  • 1 cup mini marshmallows that toast well
  • ¼ cup chocolate sauce or melted chocolate for drizzling

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and prepare a mini muffin pan.
  2. Melt the unsalted butter in a saucepan or microwave-safe bowl.
  3. Mix the granulated sugar and brown sugar into the melted butter.
  4. Cool the mixture slightly, then whisk in the eggs one at a time, followed by the vanilla extract.
  5. Sift in the cocoa powder, flour, and salt, then fold gently until just combined.
  6. Spoon the batter into your prepared mini muffin pan, filling each cup about ¾ full.
  7. Bake for 12–15 minutes, or until the centers are just set.
  8. Top each brownie bite with mini marshmallows immediately after coming out of the oven.
  9. Broil for 1–2 minutes until the marshmallows are golden toasted.
  10. Drizzle with chocolate sauce or melted chocolate after cooling slightly.
