Method
 

Directions
  1. Melt the butter and chocolate together in a microwave-safe bowl until melted and smooth.
  2. Combine the dry ingredients in a bowl: all-purpose flour, cocoa powder, baking powder, and salt.
  3. Beat together brown sugar, eggs, and vanilla extract until smooth; gradually add the cooled chocolate mixture.
  4. Gradually add the dry ingredients until just combined, avoiding overmixing.
  5. Chill the dough covered in plastic wrap for at least 1 hour.
  6. Preheat the oven to 325°F (163°C) and line baking sheets with parchment paper.
  7. Scoop cookie dough into balls and slightly flatten each ball.
  8. Bake for 12 minutes until set.
  9. Cut marshmallows in half while cookies bake.
  10. Press a marshmallow half into each cookie and return to the oven for another 2-3 minutes.
  11. Cool cookies on a wire rack.
  12. Make the icing by whisking together powdered sugar, melted butter, cocoa powder, hot water, and vanilla extract.
  13. Drizzle the icing over the marshmallows on each cookie.
  14. Add assorted sprinkles before icing sets.
  15. Let cookies rest for at least 30 minutes before serving.
