Ingredients

For the Pumpkin Spice Syrup
  • 1 cup water filtered
  • 1 cup brown sugar packed
  • ½ cup canned pumpkin puree not pumpkin pie filling
  • 1 teaspoon pumpkin pie spice or to taste
  • 1 teaspoon vanilla extract
For the Latte
  • 2 cups strong brewed coffee cooled
  • 1 cup milk or dairy-free alternative
  • ¼ cup pumpkin spice syrup from above
  • 2 cups ice cubes
  • whipped cream to taste optional for topping
  • sprinkle pumpkin pie spice for garnish

Method

Make the Pumpkin Spice Syrup
  1. In a medium saucepan, combine 1 cup of water and 1 cup of brown sugar over medium heat. Stir until the sugar is completely dissolved, creating a simple syrup.
  2. Add ½ cup of canned pumpkin puree and 1 teaspoon of pumpkin pie spice to the saucepan. Whisk together until smooth and well combined.
  3. Bring the mixture to a gentle simmer and let it cook for about 5 minutes, stirring occasionally. This helps to meld the flavors together.
  4. Remove from heat and stir in 1 teaspoon of vanilla extract. Allow the syrup to cool completely before using.
Prepare the Iced Pumpkin Spice Latte
  1. In a large glass, add 2 cups of ice cubes. This will chill the latte and keep it refreshing.
  2. Pour 2 cups of cooled strong brewed coffee over the ice. The coffee should be brewed strong to ensure the flavor stands out against the milk and syrup.
  3. Add ¼ cup of the prepared pumpkin spice syrup to the coffee. Adjust the amount based on your sweetness preference.
  4. Pour in 1 cup of milk (or your preferred dairy-free alternative) and stir well to combine all the ingredients.
  5. Top with whipped cream if desired and sprinkle a little pumpkin pie spice on top for garnish.
  6. Serve immediately with a straw and enjoy your homemade iced pumpkin spice latte!
