Ingredients
  

For the Chicken
  • 4 pieces boneless, skinless chicken breasts pounded to even thickness for uniform cooking
  • 2 tablespoons olive oil for sautéing
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper freshly ground
  • 1 teaspoon paprika smoked or sweet, based on preference
  • 1 teaspoon cumin adds depth of flavor
For the Jalapeno Sauce
  • 2 medium jalapenos seeded and finely chopped for less heat
  • 1 cup sour cream can substitute with Greek yogurt
  • 1 clove garlic minced
  • 1 tablespoon lime juice freshly squeezed for best flavor
  • 1 teaspoon honey to balance the heat
For Garnish
  • ¼ cup fresh cilantro chopped
  • 1 lime cut into wedges for serving

Method
 

Prepare the Chicken
  1. Start by seasoning the chicken breasts with salt, black pepper, paprika, and cumin on both sides. This will enhance the flavor of the chicken.
  2. Heat the olive oil in a large skillet over medium-high heat. The oil should shimmer but not smoke, indicating it's hot enough.
  3. Add the seasoned chicken breasts to the skillet. Cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). This ensures the chicken is fully cooked and safe to eat.
  4. Once cooked, remove the chicken from the skillet and let it rest on a cutting board for 5 minutes. Resting allows the juices to redistribute, keeping the chicken moist.
Make the Jalapeno Sauce
  1. In a medium bowl, combine the finely chopped jalapenos, sour cream, minced garlic, lime juice, and honey. Mix well until all ingredients are fully incorporated.
  2. Taste the sauce and adjust seasoning if necessary. If you prefer more heat, you can add more jalapenos.
Serve the Dish
  1. Slice the rested chicken breasts into strips and arrange them on a serving platter.
  2. Drizzle the jalapeno sauce generously over the chicken.
  3. Garnish with chopped cilantro and lime wedges. The lime adds a refreshing acidity that balances the richness of the chicken and sauce.
  4. Serve immediately with your choice of sides, such as rice or a fresh salad.

Notes
