For the Graham Cracker Crust Layer
  • ½ cup graham cracker crumbs Finely crushed.

Prepare the Graham Cracker Crust Layer
  1. In a mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are evenly coated and resemble wet sand. This will create a flavorful base for your popsicles.
  2. Spoon about 1 tablespoon of the graham cracker mixture into the bottom of each popsicle mold. Press down firmly with the back of a spoon to create an even layer. This step is crucial to ensure the crust holds together when frozen.
Make the Key Lime Popsicle Base
  1. In a blender, combine the sweetened condensed milk, key lime juice, heavy cream, and vanilla extract. Blend on medium speed until smooth and well combined. This mixture will give your popsicles a creamy texture and a tangy flavor.
  2. Pour the key lime mixture into the popsicle molds, filling them almost to the top, leaving a little space for expansion as they freeze. You can use a funnel to make this easier.
Freeze the Popsicles
  1. Insert the popsicle sticks into the molds. Make sure they are centered and upright. This will help in easy removal later.
  2. Place the molds in the freezer and freeze for at least 4 hours, or until completely solid. This step is essential for achieving the right texture and ensuring the popsicles hold their shape.
Serve the Popsicles
  1. To remove the popsicles from the molds, run warm water over the outside of the molds for a few seconds. This will help loosen them without melting the popsicles too much.
  2. Gently pull on the popsicle sticks to remove the popsicles. Serve immediately or store them in an airtight container in the freezer for up to 2 weeks.
