Prepare the Graham Cracker Crust Layer
- In a mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are evenly coated and resemble wet sand. This will create a flavorful base for your popsicles.
- Spoon about 1 tablespoon of the graham cracker mixture into the bottom of each popsicle mold. Press down firmly with the back of a spoon to create an even layer. This step is crucial to ensure the crust holds together when frozen.
Make the Key Lime Popsicle Base
- In a blender, combine the sweetened condensed milk, key lime juice, heavy cream, and vanilla extract. Blend on medium speed until smooth and well combined. This mixture will give your popsicles a creamy texture and a tangy flavor.
- Pour the key lime mixture into the popsicle molds, filling them almost to the top, leaving a little space for expansion as they freeze. You can use a funnel to make this easier.
Freeze the Popsicles
- Insert the popsicle sticks into the molds. Make sure they are centered and upright. This will help in easy removal later.
- Place the molds in the freezer and freeze for at least 4 hours, or until completely solid. This step is essential for achieving the right texture and ensuring the popsicles hold their shape.
Serve the Popsicles
- To remove the popsicles from the molds, run warm water over the outside of the molds for a few seconds. This will help loosen them without melting the popsicles too much.
