Key Lime Pie Popsicles

Ingredients
  

For the Popsicle Base
  • 1 cup sweetened condensed milk Use full-fat for creaminess.
  • ½ cup fresh key lime juice About 4-6 key limes, juiced.
  • 1 cup coconut milk Use full-fat for a richer flavor.
  • 1 teaspoon vanilla extract For added depth of flavor.
  • ¼ teaspoon salt Enhances sweetness.
For the Graham Cracker Crust Layer
  • 1 cup graham cracker crumbs Crush until fine.
  • ¼ cup unsalted butter Melted.
  • 2 tablespoons granulated sugar To sweeten the crust.
For Garnish (Optional)
  • 1 lime lime zest For topping.
  • ¼ cup whipped cream For serving.

Method
 

Prepare the Graham Cracker Crust
  1. In a mixing bowl, combine the graham cracker crumbs, melted butter, and sugar. Mix until the crumbs are evenly coated with butter.
  2. Spoon about 1 tablespoon of the mixture into each popsicle mold, pressing down firmly to create a crust layer.
  3. Place the molds in the freezer for about 30 minutes to set the crust.
Make the Key Lime Base
  1. In a blender, combine the sweetened condensed milk, key lime juice, coconut milk, vanilla extract, and salt.
  2. Blend on high until the mixture is smooth and well combined, about 30 seconds.
Assemble the Popsicles
  1. Remove the molds from the freezer. Carefully pour the key lime mixture over the set graham cracker crust, filling each mold to the top.
  2. Insert the popsicle sticks into the center of each mold.
  3. Return the molds to the freezer and freeze for at least 4 hours, or until solid.
Serve
  1. To remove the popsicles, run warm water over the outside of the molds for a few seconds.
  2. Gently pull on the popsicle sticks to release the popsicles.
  3. Serve immediately, garnished with lime zest and whipped cream if desired.

Notes

For a more intense lime flavor, you can add a few drops of lime extract to the mixture. These popsicles can be stored in the freezer for up to 2 weeks.
