Preparation
- Preheat your oven to 375°F (190°C) and generously grease a 9×13-inch baking dish.
- Boil the chopped Yukon Gold potatoes in a large pot of salted water until fork-tender, about 15–20 minutes. Drain and let steam escape.
- Return the potatoes to the warm pot. Add in the butter, cream cheese, sour cream, milk, garlic powder, salt, and pepper. Mash until smooth and creamy.
- Fold in ¾ cup of the shredded cheddar cheese, combining gently.
- Transfer the creamy mashed potatoes to your prepared baking dish. Spread evenly and create textured ridges on top.
- Sprinkle the remaining cheddar cheese over the top.
- Bake for 25-30 minutes until the top is golden and bubbling.
- Garnish with fresh thyme before serving.
