Mashed Potatoes
  • 3 pounds Yukon Gold potatoes peeled and chopped
  • 4 tablespoons unsalted butter can use salted
  • 1 cup sour cream can substitute with Greek yogurt
  • 8 ounces cream cheese can use low-fat cream cheese
  • 1 cup whole milk almond milk for dairy-free
  • 1 teaspoon garlic powder or use fresh minced garlic
  • to taste salt
  • to taste black pepper can use white pepper
  • 2 tablespoons fresh thyme leaves optional, can use rosemary
Topping
  • 1 cup shredded cheddar cheese can use a blend of cheeses

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and generously grease a 9×13-inch baking dish.
  2. Boil the chopped Yukon Gold potatoes in a large pot of salted water until fork-tender, about 15–20 minutes. Drain and let steam escape.
  3. Return the potatoes to the warm pot. Add in the butter, cream cheese, sour cream, milk, garlic powder, salt, and pepper. Mash until smooth and creamy.
  4. Fold in ¾ cup of the shredded cheddar cheese, combining gently.
  5. Transfer the creamy mashed potatoes to your prepared baking dish. Spread evenly and create textured ridges on top.
  6. Sprinkle the remaining cheddar cheese over the top.
  7. Bake for 25-30 minutes until the top is golden and bubbling.
  8. Garnish with fresh thyme before serving.
