  • 2 tablespoons olive oil for sautéing onions
  • 2 medium yellow onions caramelized
  • 1 tablespoon fresh thyme finely chopped
  • 1 teaspoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • 2 tablespoons Worcestershire sauce
  • 1 cup canned chicken stock
  • 2 tablespoons tomato paste
  • 2 pounds ground chuck
  • 1 cup plain dry bread crumbs
  • 2 extra-large eggs beaten
  • ½ cup ketchup for glaze

Method
 

How to Make Meatloaf
  1. Preheat your oven to 325°F (163°C) and line a sheet pan with parchment paper.
  2. Sauté the onions, fresh thyme, kosher salt, and black pepper in olive oil over medium-low heat for 8–10 minutes until the onions are soft.
  3. Stir in the Worcestershire sauce, chicken stock, and tomato paste. Allow to cool slightly.
  4. In a large bowl, gently combine the ground chuck, cooled onion mixture, bread crumbs, and beaten eggs using a fork.
  5. Shape the mixture into a loaf on the prepared sheet pan and spread the ketchup evenly over the top.
  6. Bake for 1 hour to 1 hour and 15 minutes until the internal temperature reaches 160°F (71°C).
  7. Allow the meatloaf to rest for 10 minutes before slicing.
