For the Pasta
  • 1 lb Smoked sausage (Andouille or kielbasa)
  • 12 oz Pasta (penne or rigatoni)
  • 2 tablespoon Cajun seasoning
For the Vegetables
  • 1 tablespoon Olive oil
  • 2 cups Bell peppers (mixed colors)
  • 1 medium Onion
  • 2 cups Fresh spinach optional
For the Creamy Sauce
  • 2 cups Low-sodium chicken broth
  • 1 cup Heavy cream
  • 1 cup Parmesan cheese (shredded)
  • 1 teaspoon Garlic powder
  • ¼ teaspoon Cayenne pepper optional
For Garnishing
  • 2 tablespoon Chopped parsley
  • ½ teaspoon Red pepper flakes optional

Cooking Steps
  1. Slice the sausage into thin rounds and chop the bell peppers and onions.
  2. Heat olive oil in a large skillet over medium heat, then brown the sausage until nicely caramelized.
  3. Cook the bell peppers and onions in the same skillet until they are soft and fragrant, about 3-4 minutes.
  4. Stir in the Cajun seasoning and, if desired, a bit of flour to thicken the mixture slightly.
  5. Pour in the low-sodium chicken broth and bring everything to a gentle simmer.
  6. Add the pasta to the simmering broth and cook for about 10-12 minutes until tender.
  7. Lower the heat and mix in heavy cream and Parmesan cheese until everything is beautifully smooth and creamy.
  8. Return the browned sausage to the pan and combine everything well, allowing the sausage to warm through.
  9. Taste your dish and adjust seasoning as needed.
  10. Garnish your pasta with chopped parsley or red pepper flakes before serving.
