  • 1 pound boneless skinless chicken breasts
  • 1 teaspoon salt
  • 1 teaspoon pepper
For the Rice
  • 2 tablespoons butter
  • 1 cup white rice
  • 2 cups low-sodium chicken broth
  • 2 tablespoons lemon juice
For the Seasoning
  • 2 teaspoons Italian seasoning
  • 1 cup fire-roasted tomatoes optional
  • 1 cup peas optional
  • 1 cup carrots optional
  • 1 teaspoon red pepper flakes optional

Method
 

Cooking Steps
  1. Melt the butter in a large pan with a lid over medium heat, allowing it to foam and become fragrant.
  2. Season the chicken breasts with salt, pepper, and 2 teaspoons of Italian seasoning.
  3. Brown the chicken for 1–2 minutes on each side until nicely golden brown, then remove and set aside.
  4. Combine the uncooked white rice, chicken broth, lemon juice, and the remaining teaspoon of Italian seasoning in the pan.
  5. Nestle the browned chicken breasts on top of the rice mixture.
  6. Cover the pan and simmer over medium-low heat for 20–25 minutes.
  7. Fluff the rice gently with a fork once done and garnish with lemon wedges or fresh herbs.
