How to Make Orange Meringue Cookies
  1. Preheat your oven to 200°F (93°C). Line two baking sheets with parchment paper.
  2. Separate the egg whites from the yolks while the eggs are still cold. Let the egg whites sit at room temperature.
  3. Beat the egg whites on medium speed until foamy, then add cream of tartar and a pinch of salt.
  4. Increase the mixer speed to high and gradually add the sugar, one tablespoon at a time, until stiff peaks form.
  5. Fold in the orange zest and the orange extract.
  6. Transfer the meringue into a piping bag fitted with a star tip and pipe small swirls onto prepared baking sheets.
  7. Sprinkle with extra orange zest if desired.
  8. Bake for 1.5 hours. Afterward, turn off the oven and leave the cookies inside for 1 hour to dry.
  9. Store in an airtight container at room temperature.
