How to Make Orange Meringue Cookies
- Preheat your oven to 200°F (93°C). Line two baking sheets with parchment paper.
- Separate the egg whites from the yolks while the eggs are still cold. Let the egg whites sit at room temperature.
- Beat the egg whites on medium speed until foamy, then add cream of tartar and a pinch of salt.
- Increase the mixer speed to high and gradually add the sugar, one tablespoon at a time, until stiff peaks form.
- Fold in the orange zest and the orange extract.
- Transfer the meringue into a piping bag fitted with a star tip and pipe small swirls onto prepared baking sheets.
- Sprinkle with extra orange zest if desired.
- Bake for 1.5 hours. Afterward, turn off the oven and leave the cookies inside for 1 hour to dry.
- Store in an airtight container at room temperature.
