Ingredients

For the Pastry
  • 2 sheets ready-rolled puff pastry This will create a flaky, golden exterior that's easy to work with.
  • 1 egg yolk Used for the egg wash to give your tree a beautiful, shiny finish.
  • 1 tablespoon water Combined with the egg yolk to help thin out the wash for even coverage.
For the Filling
  • 200–250 g Brie The star of the show, creamy brie adds luxurious flavor and texture to the tree.
  • 1 cup cranberry sauce Sweet and tart, this sauce brings a delightful contrast to the rich brie.
  • ¼ cup pistachios Roughly chopped; these add a crunchy element and lovely nutty flavor.
  • ½ orange zest Optional, adds a burst of citrusy brightness to balance the richness of the cheese.
For Assembly
  • 1 tablespoon all-purpose flour For dusting your surface and preventing the pastry from sticking.
  • 1 sheet baking paper Essential for lining your baking sheet.

Equipment

  • Baking Sheet
  • Oven
  • rolling pin
  • Parchment Paper

Method

How to Make
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. On a lightly floured surface, roll out the two sheets of puff pastry into equal rectangles, about ⅛ inch thick.
  3. Spread the cranberry sauce evenly over one of the pastry sheets, leaving a 1 cm border around the edges.
  4. Layer the brie slices over the cranberry sauce, followed by the chopped pistachios and optional orange zest.
  5. Carefully place the second pastry sheet on top and press the edges firmly to seal.
  6. Cut out a large triangle shape from the filled pastry to create the Christmas tree form.
  7. Slice horizontal branches along both sides of the triangle, leaving the bottom intact for decoration.
  8. Gently twist each branch outward to form a lovely spiral.
  9. Brush the entire surface with egg wash and bake for 22–25 minutes, or until golden brown.
  10. Let cool slightly before serving warm.
