Brownie Batter
  • 1 box red velvet cake mix
  • 3 large eggs at room temperature
  • ½ cup melted coconut oil or substitute with vegetable oil or melted butter
Optional Mix-Ins
  • 1 cup white chocolate chips or substitute with dark chocolate chips

Method
 

How to Make
  1. Preheat your oven to 350°F (175°C). Line an 8×8 or 9×9-inch pan with parchment paper.
  2. Combine the cake mix, eggs, and melted coconut oil in a large bowl. Stir until just combined.
  3. Fold in white chocolate chips if you're using them.
  4. Spread the batter evenly into your prepared pan. Press additional white chocolate chips on top, if desired.
  5. Bake for 18–22 minutes, until a toothpick inserted in the center comes out with moist crumbs.
  6. Cool completely in the pan. Lift the brownies out using parchment and slice into squares.
