How to Make Red Velvet Cake Mix Cookies
  1. Preheat your oven to 350°F.
  2. Line a baking sheet with parchment paper or lightly grease it.
  3. In a large mixing bowl, combine the cake mix, oil or melted butter, and eggs. Use a hand mixer to beat everything together until a smooth dough forms.
  4. Fold in the white chocolate chips gently by hand until they are evenly distributed throughout the dough.
  5. Use a cookie scoop to portion the dough onto the prepared baking sheet, leaving about 2 inches between each scoop.
  6. Place the baking sheet in the oven and bake for 12 to 14 minutes, or until the edges are just set.
