How to Make Red Velvet Cake Mix Cookies
  1. Preheat your oven to 350°F and prepare a baking sheet by lining it with parchment paper.
  2. Combine the red velvet cake mix, oil, and eggs in a mixing bowl using an electric mixer until well incorporated.
  3. Fold in the white chocolate chips and mini semi-sweet chocolate chips with a spatula.
  4. Chill the dough covered with plastic wrap in the refrigerator for 30–60 minutes.
  5. Scoop about 2 tablespoons of dough and roll into balls, placing them on the baking sheet 2 inches apart.
  6. Optional: Press 2–3 extra white chocolate chips on top of each cookie before baking.
  7. Bake for 8–10 minutes until edges are set and centers are soft.
  8. Cool cookies on the baking sheet for 5 minutes, then transfer to a wire rack.
  9. Serve warm or cooled.
