How to Make Red Velvet Cake Mix Cookies
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the red velvet cake mix, ⅓ cup of oil, and 2 eggs. Blend until well combined.
  3. Gently fold in the ½ cup of white chocolate chips and ½ cup of mini semi-sweet chocolate chips.
  4. Cover the dough with plastic wrap and refrigerate for 30 to 60 minutes.
  5. Scoop about 2 tablespoons of dough and roll into balls. Place them on the baking sheet 2 inches apart.
  6. Optional: Press 2 to 3 white chocolate chips on top of each cookie ball.
  7. Bake for 8 to 10 minutes until the edges are set and the centers are still soft.
  8. Let the cookies cool on the sheet for about 5 minutes before transferring to a wire rack.
