How to Make Red Velvet Cake Mix Cookies
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the red velvet cake mix, ⅓ cup of oil, and 2 eggs using an electric hand mixer.
  3. Gently fold in the white chocolate chips and mini semi-sweet chocolate chips until evenly distributed.
  4. Cover the dough with plastic wrap and refrigerate for 30 to 60 minutes.
  5. Scoop about 2 tablespoons of dough and roll them into balls. Place on the prepared baking sheet, 2 inches apart.
  6. Optional: Gently press 2 to 3 white chocolate chips on top of each cookie ball.
  7. Bake in the preheated oven for 8 to 10 minutes until edges are set and centers look soft.
  8. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
  9. Serve warm or cooled as a delightful treat.
