How to Make Red Velvet Cheesecake Bites
- Microwave the dried cake mix in two 30-second intervals, stirring in between. Allow it to cool completely.
- Beat the softened cream cheese until smooth and creamy. Gradually mix in the cooled cake mix.
- Cover the dough mixture and chill in the refrigerator for 2 hours.
- Scoop out 1-tablespoon portions and roll them into balls. Place on a parchment-lined baking sheet.
- Melt the white almond bark in the microwave, stirring until smooth.
- Dip each ball into the melted almond bark and tap off any excess.
- Melt the red candy melts and drizzle over the coated bites.
- Let the coating harden fully at room temperature or in the fridge before serving.
