How to Make Red Velvet Cookies
- Preheat your oven to 350°F (177°C) and prepare two baking sheets by lining them with parchment paper.
- Whisk together the dry ingredients in a small bowl: flour, cocoa powder, baking soda, baking powder, and salt.
- Beat the softened butter, brown sugar, and granulated sugar in a large bowl for about two minutes until the mixture is light and fluffy.
- Add the egg yolks, vanilla, and red food coloring to the butter mixture. Mix for another two minutes until fully combined.
- Gradually mix in the dry ingredients to the wet mixture until just combined. Do not overmix.
- Fold in the chopped white chocolate.
- Scoop the dough into 18 equally sized balls and place them two inches apart on the prepared baking sheets.
- Bake in the preheated oven for 10–12 minutes, until edges are set but centers are still a bit soft.
- Rest the cookies on the baking sheet for 5 minutes, then transfer to a cooling rack for another 5 minutes.
