How to Make Red Velvet Cookies
  1. Preheat your oven to 350°F (177°C) and prepare two baking sheets by lining them with parchment paper.
  2. Whisk together the dry ingredients in a small bowl: flour, cocoa powder, baking soda, baking powder, and salt.
  3. Beat the softened butter, brown sugar, and granulated sugar in a large bowl for about two minutes until the mixture is light and fluffy.
  4. Add the egg yolks, vanilla, and red food coloring to the butter mixture. Mix for another two minutes until fully combined.
  5. Gradually mix in the dry ingredients to the wet mixture until just combined. Do not overmix.
  6. Fold in the chopped white chocolate.
  7. Scoop the dough into 18 equally sized balls and place them two inches apart on the prepared baking sheets.
  8. Bake in the preheated oven for 10–12 minutes, until edges are set but centers are still a bit soft.
  9. Rest the cookies on the baking sheet for 5 minutes, then transfer to a cooling rack for another 5 minutes.
