Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together the softened unsalted butter, light brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes.
- Add the eggs one at a time, mixing well after each addition, then blend in vanilla extract and red food coloring.
- Whisk together the all-purpose flour, cocoa powder, baking powder, and salt in a separate bowl.
- Gradually mix the dry ingredients into the wet mixture just until combined.
- Scoop the dough using a 1 oz or 1 tablespoon scoop.
- Roll each dough ball in granulated sugar and then coat in powdered sugar.
- Place the dough balls on the lined baking sheet, spaced about 2 inches apart.
- Bake for about 10 minutes until tops are set but centers remain soft.
- Cool the cookies on the pan for 5 minutes before transferring to a wire rack.
