Ingredients
  

For the Cookie Dough
  • ½ cup unsalted butter softened
  • 1 cup light brown sugar
  • ½ cup granulated sugar
  • 2 large eggs room temperature
  • 1 teaspoon vanilla extract
  • 2 tablespoons red food coloring adjust for desired hue
  • 2 cups all-purpose flour do not pack
  • ¼ cup cocoa powder unsweetened
  • 2 teaspoons baking powder
  • ½ teaspoon salt
For the Coating
  • ½ cup granulated sugar
  • ½ cup powdered sugar

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the softened unsalted butter, light brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes.
  3. Add the eggs one at a time, mixing well after each addition, then blend in vanilla extract and red food coloring.
  4. Whisk together the all-purpose flour, cocoa powder, baking powder, and salt in a separate bowl.
  5. Gradually mix the dry ingredients into the wet mixture just until combined.
  6. Scoop the dough using a 1 oz or 1 tablespoon scoop.
  7. Roll each dough ball in granulated sugar and then coat in powdered sugar.
  8. Place the dough balls on the lined baking sheet, spaced about 2 inches apart.
  9. Bake for about 10 minutes until tops are set but centers remain soft.
  10. Cool the cookies on the pan for 5 minutes before transferring to a wire rack.
