Ingredients
  

Crust
  • 1 piece 9-inch deep-dish pie crust Flaky crust for holding the filling.
Filling
  • 1 cup roasted red peppers Chopped
  • 1 pound breakfast sausage Cooked and crumbled
  • 6 large large eggs
  • 1 cup half-and-half Can substitute with whole milk.
  • 1 cup shredded cheddar cheese Can mix with mozzarella.
  • 1 teaspoon salt Adjust to taste.
  • 1 teaspoon black pepper Fresh cracked for added flavor.
  • 2 tablespoons fresh parsley Optional, for garnish.

Method
 

Instructions
  1. Preheat your oven to 375°F (190°C). Line your deep-dish pie pan with the pie crust and pre-bake for 10 minutes using pie weights.
  2. Cook the breakfast sausage in a skillet over medium heat until browned, about 5-7 minutes. Drain excess grease and let cool.
  3. Whisk together the eggs and half-and-half in a mixing bowl. Add salt and black pepper to taste, whisking until smooth.
  4. Layer the crumbled sausage and chopped roasted red peppers into the pre-baked pie crust.
  5. Pour the egg mixture over the sausage and peppers. Sprinkle shredded cheddar cheese on top.
  6. Bake your quiche in the preheated oven for 35 to 40 minutes until the center is set and the top is golden brown.
  7. Cool for about 10-15 minutes before slicing. Garnish with chopped fresh parsley.
