For Garnishing
  • 1 Lemon, sliced For extra citrus flavor.

Method
 

Cooking Instructions
  1. Season the chicken breasts generously with salt, pepper, garlic powder, and onion powder.
  2. Optional: Brown the chicken in olive oil over medium-high heat for 2–3 minutes per side until golden.
  3. Mix together the long-grain white rice, chicken broth, lemon juice, thyme, and oregano in a bowl.
  4. Pour the rice mixture over the seasoned chicken in the slow cooker.
  5. Top with slices of lemon.
  6. Cover and set to cook on low for 6–7 hours or on high for 3–4 hours.
  7. Check chicken’s internal temperature about 30 minutes before serving; it should reach 165°F.
  8. Remove chicken and fluff the rice with a fork, adjusting seasoning if necessary.
  9. Serve chicken whole or shredded over rice, garnished with fresh parsley.
