How to Make Smooth Hummus
- Start by opening the can of chickpeas and draining them well. Rinse under cold water to remove any excess sodium, and for an ultra-smooth texture, peel off the skins if you wish.
- In a food processor or blender, combine the tahini and fresh lemon juice. Blend for about 30 seconds until the mixture becomes whipped and creamy, creating a proper base for your hummus.
- Introduce the chickpeas, garlic, salt, and olive oil into the food processor. Blend until combined—this might take a minute or two.
- While blending, gradually drizzle in the ice-cold water, 1 tablespoon at a time. Keep blending until the mixture is smooth and fluffy.
- Taste your hummus and adjust with a bit more salt, lemon juice, or cold water until you reach your desired flavor and consistency.
- Serve the hummus in a lovely bowl, drizzling with olive oil and sprinkling your choice of garnishes like paprika, chopped parsley, or za’atar.
