  • 1 can Chickpeas drained and rinsed
  • ¼ cup Tahini
  • 2 tablespoons Fresh lemon juice
  • 1 clove Garlic
  • 1 tablespoon Olive oil
  • 2-4 tablespoons Ice-cold water for consistency
  • ½ teaspoon Salt
Garnish
  • to taste Extra olive oil for drizzling
  • to taste Paprika for sprinkling
  • to taste Chopped parsley for garnish
  • to taste Za’atar optional

How to Make Smooth Hummus
  1. Start by opening the can of chickpeas and draining them well. Rinse under cold water to remove any excess sodium, and for an ultra-smooth texture, peel off the skins if you wish.
  2. In a food processor or blender, combine the tahini and fresh lemon juice. Blend for about 30 seconds until the mixture becomes whipped and creamy, creating a proper base for your hummus.
  3. Introduce the chickpeas, garlic, salt, and olive oil into the food processor. Blend until combined—this might take a minute or two.
  4. While blending, gradually drizzle in the ice-cold water, 1 tablespoon at a time. Keep blending until the mixture is smooth and fluffy.
  5. Taste your hummus and adjust with a bit more salt, lemon juice, or cold water until you reach your desired flavor and consistency.
  6. Serve the hummus in a lovely bowl, drizzling with olive oil and sprinkling your choice of garnishes like paprika, chopped parsley, or za’atar.
