  • 1 cup unsalted butter room temperature
  • 1 cup granulated sugar
  • 1 pinch salt
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 2 cups all-purpose flour
Filling and Topping
  • ½ cup raspberry or strawberry jam
  • 1 cup powdered sugar for dusting

Method
 

Making the Cookies
  1. Cream together the unsalted butter, granulated sugar, and salt until light and fluffy.
  2. Add the eggs one at a time, mixing well after each addition.
  3. Stir in the vanilla and almond extracts until well combined.
  4. Gradually mix in the flour until just combined to form a soft dough.
  5. Roll out the dough to about ⅛ inch thick on parchment paper.
  6. Chill the rolled-out dough in the refrigerator for 20 minutes.
  7. Preheat your oven to 350°F (175°C) and line baking sheets with parchment.
  8. Cut out cookies using cookie cutters, aiming for half plain and half with heart cutouts.
  9. Freeze the cut cookies for 3-5 minutes to prevent spreading during baking.
  10. Bake for 8-10 minutes until the edges are pale and soft.
  11. Allow cookies to cool completely on the baking sheets.
  12. Dust the cookies with heart cutouts with powdered sugar.
  13. Spread jam on plain cookie bottoms and sandwich them with the sugar-dusted tops.
